
The HPT is a non-profit 501(c)(3) organization consisting of people interested in the preservation and restoration of local historic and cultural resources, single/multi-family housing and commercial buildings primarily within the City of Holyoke and to provide education for responsible economic development through preservation classes, lectures and historic trades apprenticeships.

BUTTERED PEAS AND LETTUCE (1775 STYLE)
This was a popular way to prepare peas in the 18th century, as lettuce was often cooked rather than eaten raw.
Ingredients:
2 cups fresh green peas (or dried peas, soaked overnight)
- 1 small head of lettuce, roughly chopped
- 2 tablespoons butter
- ½ teaspoon salt
- ¼ teaspoon black pepper
- A pinch of sugar (optional)
- ½ cup water or broth
Instructions:

2. In a saucepan, melt the butter over
medium heat.
3. Add the peas and chopped lettuce,
stirring to coat them in butter.
4. Pour in the water or broth, then season
with salt, pepper, and a pinch of sugar if
using.
5. Cover and simmer for about 10-15
minutes, or until the peas are tender and
the lettuce has wilted.
6. Stir well and serve warm as a side dish.
